2lbs. 4 oz. giant beans, 2c. olive oil, 3 medium sized onions finely diced, 1 clove garlic, 3-4 ripe tomatoes, 1 branch thyme,2-3 tablespoons finely chopped parsley, 2 Italian or Greek sausages, salt and pepper…Soak the giant beans in water overnight. The following day rinse the beans, drain through a collander and place them in a pot with water. Let them boil for about an hour. Strain the beans again and place them in a pan or pyrex dish. In a pot, saute the onions in the oil. Add the finely diced tomatoes, the garlic, the thyme, the parsley, the sausages cut in thick slices, some water; season with salt and pepper and let these cook for about 10 minutes. Then pour this sauce on the giant beans you previously placed in a pan or pyrex dish. Bake in a 350 degree oven for about 35 minutes.
